3 Feasts Ceviche Recipe:
INGREDIENTS: Fish Fillets, such as flounder, sole, or cod Water Salt Limejuice 1 1⁄4 cup Salt Jalapeño small dice 1 tsp parsley chopped red onion, small dice 1⁄2 cup red pepper, small dice 1⁄2 cup mango or papaya small dice 1⁄2 cup black pepper to taste Lettuce leaves 6 each
Cut the fish into strips 1 1⁄2 inch long by 1⁄4 inch thick. Place in a bowl of lightly salted water with a 1⁄4 cup of lime juice.
Let it sit for 1 hour. Drain well. Combine the remaining ingredients and toss well after an hour. Adjust seasoning to taste with salt pepper lime juice and hot sauce. Serve in lettuce leaf cups with tortillas or rice crackers.
